Responsibilities

  • Oversee the preparation and timely production of all dim sum items to the highest quality standards
  • Ensure consistency in taste, presentation, and portion control in line with Shang Palace standards
  • Supervise and guide dim sum kitchen team, ensuring efficiency and teamwork
  • Maintain strict hygiene, food safety, and sanitation practices in compliance with HACCP
  • Monitor ingredient quality, stock levels, and minimize wastage
  • Collaborate with Executive Chef and Sous Chefs on menu development and seasonal specialties
  • Conduct quality checks on dim sum items before service to ensure excellence
  • Ensure proper maintenance and usage of kitchen equipment, coordinating with Engineering when required

 

Requirements

  • Minimum 5 years of experience in Chinese cuisine, specializing in dim sum
  • Prior experience in a luxury hotel or reputable Chinese restaurant preferred
  • Strong knowledge of traditional and modern dim sum techniques
  • Proven leadership and team management skills
  • Detail-oriented with a passion for quality and consistency
  • Ability to work in a fast-paced, high-volume kitchen environment
  • Fluent in English; Mandarin/Cantonese is an added advantage
  • Flexible to work shifts, weekends, and public holidays
