At Shangri-La, hospitality from the heart defines who we are. We are seeking a passionate, creative, and experienced Service Leader – Culinary (Chef de Partie – Fine Dining) to join our Culinary team. In this role, you will be responsible for maintaining exceptional food quality, leading your assigned kitchen section, ensuring the highest standards of hygiene and food safety, and delivering memorable fine dining experiences for our guests.
In The Role, We Rely On You To
- Manage and supervise the daily operations of the assigned Fine Dining kitchen section, ensuring efficient preparation and service.
- Prepare, cook, and present dishes in accordance with Shangri-La's recipes, presentation standards, and quality expectations.
- Ensure consistency in food quality, taste, portion control, and presentation throughout every service.
- Supervise, guide, and train junior chefs and kitchen associates to maintain high culinary standards and support their professional development.
- Monitor food preparation processes to ensure compliance with food safety, hygiene, sanitation, and HACCP standards.
- Control food costs by minimizing waste, maintaining proper stock rotation, and following portion control guidelines.
- Assist with menu planning, recipe development, seasonal promotions, and continuous improvement of culinary offerings.
- Coordinate closely with the Purchasing and Stewarding teams to ensure adequate stock levels and proper storage of ingredients.
- Maintain cleanliness, organization, and safety within the kitchen at all times.
- Support the Executive Chef and Sous Chef in achieving departmental goals while delivering exceptional guest dining experiences.
We Are Looking For Someone Who
- Has previous experience as a Chef de Partie or a strong Demi Chef de Partie in a luxury hotel or fine dining restaurant.
- Has solid knowledge of international culinary techniques, food preparation, and fine dining standards.
- Demonstrates strong leadership, coaching, and team management skills.
- Has excellent knowledge of food safety, HACCP, hygiene, and sanitation practices.
- Is passionate about culinary excellence with strong attention to detail and creativity in food presentation.
- Can perform effectively under pressure in a fast-paced kitchen environment while maintaining quality standards.
- Has excellent communication and interpersonal skills and works well within a multicultural team.
- Is highly organized, proactive, and committed to continuous learning and professional development.
- Maintains a positive attitude, strong work ethic, and commitment to delivering exceptional guest experiences.
